GREEK SWEET BREAD

INGREDIENTS:

 

  •        500 gr  TSOUREKI mix
  • 160-175 gr  Water
  •       100  gr  Yeast or 17.5 gr dry yeast
  •         80  gr  Melted butter (margarine or 82%)


EXECUTION:

 

Add all the ingredients - except the butter - in a mixing bowl and whisk using the Hook at a low speed for 5 minutes  / if you have a professional mixer  - 15 minutes at high speed  . Towards the end add butter .

Let the dough rest , covered in a warm place, until it is double the size. Conjure up the dough  and let it rest again. Repeat twice . Cut in desired portions set them on a pan and let them rise again / for professional use put them in steam bath for about 1/2 hour. Gently coat with egg wash
Bake at a preheated oven at   160 ° untill it is golden brown.
