  •        500 gr  TSOUREKI mix
  •        145-155 gr Warm Water (30°)
  •       40 - 50  gr  Yeast 





Add all the ingredients  in a mixing bowl and whisk using the Hook at a low speed for 5 minutes  / if you have a professional mixer  - 15 minutes at high speed  .

Let the dough rest , covered in a warm place, until it is double the size. Conjure up the dough  and let it rest again. Repeat 2-3 times for a better result . Cut in desired portions set them on a pan and let them rise again / for professional use put them in steam bath for about 1/2 hour. Gently coat with egg wash
Bake at a preheated oven at   160 ° untill it is golden brown.
